Conclusions -- References. 330 $aAccording to the Food and Agriculture Organisation of the United Nations, one third of food produced annually for human consumption results in food losses or wastage, which is environmentally degrading, economically unviable, ethically incorrect, and does not contribute to sustainable development. The use of additives can help prevent the waste of food that is still fit for consumption in a world where about 16% of the world's population goes hungry. Food additives may overcome the problem of limited supply of natural ingredients, increase the shelf life of foods and simplify the complex cooking procedures. To raise the consumer's knowledge about food additives, this work presents and explain in a simple manner some physical/chemical properties of emulsifiers, namely fatty acids esters and sucrose esters of fatty acids. Moreover, this work reviews and illustrates, recurring to recipes of molecular gastronomy, how these additives are used in food preparation to achieve and maintain certain desirable characteristics, how they contribute to obtain a better result in final preparation, and how they can be used in modern cuisine. Preparations coming from the discipline of molecular gastronomy have been chosen since they are based on laboratory related procedures and only use few ingredients, including an additive. 517 $aDemystifying Emulsifiers as Additives through Molecular Gastronomy 606 $aMolecular gastronomy 615 0$aMolecular gastronomy. 676 $a641.5 700 $aGomes$b Li?gia Rebelo$01348887 702 $aSimo?es$b Catarina D. 702 $aSilva$b Cla?udia 801 0$bNjHacI 801 1$bNjHacl 906 $aBOOK 912 $a9910633983703321 996 $aDemystifying Emulsifiers as Additives through Molecular Gastronomy$93086578 997 $aUNINA LEADER 02395nas 2200661- 450 001 9910404210403321 005 20241204164417.0 024 8 $aISSN/SEP2013 035 $a(OCoLC)857385881 035 $a(CKB)3340000000002194 035 $a(CONSER)--2017243002 035 $a(EXLCZ)993340000000002194 100 $a20130902b20132022 --- - 101 0 $aeng 135 $aur||||||||||| 181 $ctxt$2rdacontent 182 $cc$2rdamedia 183 $acr$2rdacarrier 200 00$aAustralasian journal of paramedicine 210 1$a[Ballarat West, Victoria] :$cParamedics Australasia,$d[2013]- 210 31$a[Melbourne, Vic 3000] :$cParamedics Australasia 215 $a1 online resource 300 $aRefereed/Peer-reviewed 311 08$a2202-7270 517 1 $aAJP 606 $aAmbulance service$vPeriodicals 606 $aEmergency medical services$vPeriodicals 606 $aEmergency medical services$xStudy and teaching$vPeriodicals 606 $aAllied health personnel$vPeriodicals 606 $aTransport of sick and wounded$vPeriodicals 606 $aParamedical education$vPeriodicals 606 $aEmergency Medical Services 606 $aAllied health personnel$2fast$3(OCoLC)fst00805590 606 $aAmbulance service$2fast$3(OCoLC)fst00806788 606 $aEmergency medical services$2fast$3(OCoLC)fst00908554 606 $aEmergency medical services$xStudy and teaching$2fast$3(OCoLC)fst00908593 606 $aParamedical education$2fast$3(OCoLC)fst01052974 606 $aTransport of sick and wounded$2fast$3(OCoLC)fst01154957 608 $aPeriodical. 608 $aPeriodicals.$2fast 615 0$aAmbulance service 615 0$aEmergency medical services 615 0$aEmergency medical services$xStudy and teaching 615 0$aAllied health personnel 615 0$aTransport of sick and wounded 615 0$aParamedical education 615 12$aEmergency Medical Services. 615 7$aAllied health personnel. 615 7$aAmbulance service. 615 7$aEmergency medical services. 615 7$aEmergency medical services$xStudy and teaching. 615 7$aParamedical education. 615 7$aTransport of sick and wounded. 712 02$aParamedics Australasia, 906 $aJOURNAL 912 $a9910404210403321 996 $aAustralasian journal of paramedicine$92067390 997 $aUNINA
