Les apothicaires défient la Sorbonne en y donnant les premiers cours de chimie professés en France avec démonstration publique. L’ouvrage de Philippe Jaussaud retrace la vie, l’œuvre et la contribution de ces apothicaires qu’on nomme aujourd’hui pharmaciens, au développement d’un Jardin devenu Muséum. Ils y occupèrent des chaires de chimie mais s’illustrèrent également en histoire naturelle, aux chaires de zoologie, physiologie, physique végétale ou encore minéralogie. Le caractère pluridisciplinaire de leur formation explique sans doute cette diversité d’intérêts et de compétences. Certains, comme Milne-Edwards ou Fontaine furent directeurs du Muséum. Tous, par la qualité de leurs travaux, ont laissé leur trace dans l’immense champ de la recherche scientifique.
