Fresh fa risalire la nostra fame paradossale alle sue radici nell'aumento del consumo di massa, quando la freschezza sembrava sia una prova che un antidoto al progresso. Susanne Freidberg inizia con la refrigerazione, una tendenza tanto controversa all'inizio del XX secolo quanto lo sono oggi le colture geneticamente modificate. I consumatori hanno accusato le celle frigorifere di prezzi elevati e uova marce, ma, alla fine, il marketing aggressivo, i progressi tecnologici e le nuove idee su salute e igiene hanno superato questa sfiducia.
