Aux XVIIe et XVIIIe siècles, l’Hôtel-Dieu est le plus grand hôpital de Marseille. Dès sa création, il se distingue de nombres d’hôpitaux de son époque par l’emploi d’un personnel soignant strictement laïque et par la présence d’une véritable équipe médicale. Soutenus par la direction de l’hôpital, les soignants proposent des soins en adéquation avec les connaissances médicales de leur époque répondant à des normes qualitatives strictes visant à la guérison complète des malades. Mais l’Hôtel-Dieu n’est pas qu’un lieu de soins, il est aussi un lieu de travail et un lieu de vie pour son personnel qui y assure une présence continue de jour comme de nuit. Il est en outre, un lieu de formation pour les chirurgiens et les pharmaciens qui y suivent un véritable cursus pouvant mener jusqu’à l’obtention des lettres de maîtrise.
