In order to insure the quality of foodstuffs, it is necessary to know what the factors that govern the transfer of trace elements from the ground to the plant that has been harvested are, and to know those that have a direct impact on the final content of the foodstuff and ultimately on the consumer. The objective of this book is to bring to light the art of transfer of the twelve trace elements starting from the soils to the plants destined to be consumed.
