Les communautés totonaques de la Sierra de Puebla, dans le centre-est du Mexique, cultivent le café sous couvert forestier depuis la fin du xixe siècle. À partir des années 1970, elles bénéficient de l'intervention de l'État mexicain qui les organise en coopératives de caféiculteurs avant de se retirer précipitamment à la fin des années 1980. En parallèle, les paysans totonaques n'ont jamais complètement abandonné la polyculture vivrière autour du maïs ni certains usages agroforestiers traditionnels en marge de la caféiculture.  Nicolas Ellison a étudié les rapports pratiques et symboliques que les Totonaques de la Sierra de Puebla entretiennent avec leur environnement dans le contexte actuel des changements socio-économiques liés au développement et aux aléas de l'économie mexicaine et mondiale, notamment autour de la production de café. Il montre comment les



dynamiques du développement et de l'économie de marché sont subordonnées aux normes locales du rapport aux autres et comment les représentations mésoaméricaines de l'environnement régissent les rapports pratiques à la nature.  Cette étude s'adresse autant aux anthropologues désireux de comprendre comment les pratiques économiques et agricoles sont conditionnées par (en même temps qu'elles régissent) les rapports sociaux et les systèmes de savoir qu'aux socio-économistes soucieux d'une approche compréhensive des faits économiques, ainsi qu'à tous les lecteurs critiques du « développementalisme ».
