La France, numéro un mondial de la gastronomie ? Notre cuisine est-elle la meilleure et la plus inventive ? Est-elle réellement connue, copiée, enviée dans le monde entier ? Ou faut-il voir dans ce triomphalisme l’un de ces travers égocentriques dont notre pays a le secret ? Né après la Révolution française, le mythe gastronomique français a connu son apogée au xixe siècle : Brillat-Savarin triomphe, Carême codifie la haute cuisine, Escoffier s’impose comme une référence mondiale. Bousculant les idées reçues, Alain Drouard retrace l’histoire de ce grand récit national qui a façonné nos représentations collectives, de ses origines lointaines à la Slow Food, de La Reynière au Michelin et du pot-au-feu à la cuisine moléculaire. Il constate le fossé grandissant entre la réalité de nos pratiques alimentaires et culinaires et les discours satisfaits qui les accompagnent. La France, autoproclamée « premier pays gastronomique » du monde, est aujourd’hui le deuxième mangeur de pizza après les États-Unis, et Mac Donald y est le premier restaurateur… Une histoire de papilles qui éveille l’appétit, et l’exploration des remèdes pour redonner, modestement, un avenir à notre gastronomie. |
