• Sommario/riassunto: RETOUR AUX SOURCES - la Méditerranée - par une double voie d’accès : le goût et l’odorat, sens réputés primitifs voire inférieurs parce que trop liés à la vie instinctuelle et affective. Ils seraient en outre - autre motif de défiance - au service de la jouissance plutôt que du savoir. Les prendre pour guides n’irait donc pas sans risques. Saveurs, senteurs : une invite à régresser jusqu’à ce « Moi-olfactif » - et gustatif - qui précéderait et étayerait un sujet pensant : je sens, je hume, je goûte… donc de la sensation à l’être la conséquence est bonne. La sensation n’inaugure-t-elle pas l’intelligence ? Le corps n’est-il pas le creuset où s’élaborent perceptions et visions du monde ? Il s’agira en fait de saisir, à travers textes et cultures, l’essence de la Méditerranée - mer, mère, corps odorant et sapide, paysage empyreumatique ou bassin miasmatique… - de la citer devant le forum de la sensation pour en découvrir la nature authentique ou fantasmée, non par le truchement de la raison raisonnante mais de la « raison gourmande », qui fait du « monde son aliment » (G. Bachelard). Aspirer à connaître la Méditerranée en anima plutôt qu’en animas, c’est finalement en appeler à « l’ange hédoniste » (M. Onfray), qui prône la réconciliation du corps et de l’esprit, et rappeler à l’homo insipiens contemporain que savoir et saveur sont intimement liés. De même que « la sapience couronne l’ordre du goût, de même la sagacité parfait l’échelle aromatique » (M. Serres). Sapience et sagacité qui constituent - ne l’a-t-on pas quelque peu oublié ? - le fondement de l’aisthêsis, la faculté de juger du goût des choses et des choses de goût.
